Flake and chip ice are generated by an Industrial Ice Machine in different ways. Flake ice is made when the machine freezes water inside a large metal cylinder/drum before being sub-cooled to -7°C and cracked off by internal blades into flat, thin flakes. Chip ice, on the other hand, is produced at -1°C when water freezes over the evaporator before forming into rough-sized pieces with a crystal-like appearance.
